On February 4, 2010, at 6pm Autumn's Harvest Farm will host a Pig Butchering 101 course Pig breeds utilized at Autumn’s Harvest Farm and why we utilize them, different parts of the pig and what they can be utilized for. Step by step breakdown and butchering of a whole pig. The cost is $50 per person which is non–refundable (limit 10). Description - In this class we are hoping to help people achieve a better understanding of what butchering a pig involves. This class will assist students in obtaining the basic skills needed to butcher a pig. We will end the class with a sausage taste test from sausages made at Autumn’s Harvest farm.

2010 Master Composter Volunteer Training Wednesday evenings, Feb. 17-May 5 (no class March 24), 6:30-8:30pm (Application deadline: Friday, January 29). Cooperative Extension Education Center, 615 Willow Avenue, Ithaca NY. Join this enthusiastic group committed to promoting responsible composting in Tompkins County. Training involves 20 hours of class time covering composting in depth, and 20 hours of practical internship. After completing the training, Master Composters give back to the community in a variety of outreach activities. Locally-Grown Foods Festival on Friday, February 19, 5:00-8:00 pm at Union Hall, 100 Civic Center Plaza, Corning NY. Cornell Cooperative Extension invites consumers to meet regional farmers and sample locally produced meats, vegetables, fruits, cheese, wines, microbrews and other farm products at the first-ever Locally-Grown Foods Festival in Corning, NY. At least a dozen local producers will be present to talk about their farms and to share information on buying local products. The event will feature a series of mini-classes on working with local butchers, how to join a Community Supported Agriculture cooperative, the benefits of buying local meats and produce, and more. Some local products will be available for sale and Food Stamps will be accepted toward purchases.  The Locally-Grown Foods Festival will be held on Friday, February 19 from 5:00 to 8:00 pm at Union Hall, 100 Civic Center Plaza in Corning, next to the Nasser Civic Center Skating Rink. Join us for the 12th Annual Great Downtown Ithaca Chili Cook-off and WinterFest, Saturday, February 20th, 2010, from 11:30am to 4:30pm. Over 30 restaurants compete for the titles of Best Chili and Wings in the People's Choice, Vegetarian & Meat, and the Official Judging competition. Events include Chili & Hot Wing Tasting, Mechanical Bull Riding, Chili Idol Karaoke, Iron Chef, Farmers Market, Wine & Beer Tasting, Music, Contests and Prizes. On-going volunteer efforts in Central New York are documenting the history of farm families that had Holstein herds, all breed enthusiasts and others with stories about dairy farming are welcome at an informal gathering at 7:30 pm Tuesday, February 23rd in the Ag Center, 100 Easton St, Morrisville. Dr. Milt Sernett, professor emeritus of Syracuse University and a volunteer with the Smithfield Community Association will present local dairy history and facilitate a discussion. (sponsored by the Cornell Cooperative Extension of Madison County).

SUGAR MOON OPEN HOUSE at Sapsquatch on 2.28.09 - 11 am 3pm.  Join us for stories, music, food, and fun as we gather 'round the boiler and welcome this years sugar moon. Kids activities during the day and tours at 12:00 and 2:00pm. Donate and support your local sugaring folk. Enjoy sledding, hiking, and a moonlight sugarbush tour. Donations accepted.

At Sapsquatch, sugarbush tours are offered every Saturday (2/27 thru 4/3) at 1:00pm.  Tours of the sugarbush including the history, lore, and process of sugaring will be offered EVERY SATURDAY at 1:00 pm from February 27 thru April 3. Learn about the progression of sugaring from the time of the Native Americans to present. Try your hand at tapping. Taste sap and syrup. Donations accepted.

Winter Worm Composting Class, Saturday, March 6, 10:00 am – 12 Noon, Cooperative Extension Education Center, 615 Willow Avenue, Ithaca NY, This hands-on class teaches all you’ll need to know about “vermicomposting,” an indoor composting system that is easy and produces particularly rich compost for your garden and houseplants. 2010 Compost Fair, Saturday, May 1, 10:00 am to 4:00 pm, Cooperative Extension Education Center, 615 Willow Ave., Ithaca. Celebrate spring’s arrival by stopping by the fair for a guaranteed good time! See and experience all aspects of composting. Learn more than you ever thought possible about making and using “black gold.” Teams of Master Composters will be on hand to answer your questions. There will be interactive displays, activities for kids and continuous tours of our composting demonstration site. Prize drawings will be held at 3:30 pm for all attendees and everyone registered on the Tompkins County Compost Map (register by filling out a card at Cooperative Extension or click on “Get on the map!” on our website: ccetompkins.org/compost). June 2010. Meat Processing and Food Safety Certificate Program. SUNY Cobleskill will be offering this program in January and June. This intensive hand on training program is designed to provide the knowledge and skills students require entering employment in the meat processing industry. Students will be skilled in sanitation, food safety, slaughter, meat cutting and processing. As part of the students’ preparation for the industry, the program consists of specialized training in the accuracy of cutting, knife handling, portion control, merchandizing and the utilization of all products. The program includes: Safety and Sanitation, Species Harvesting/Slaughtering, Primal Fabrication, Retail Cutting and Wrapping, and Customer Relations. The cost for this program is $2,995 which includes textbook, hard hat, frock, 5 inch boning knife, 12 inch butcher knife and safety cutting glove.
